Carnival for June 20, 2011

I'm hosting this week's blog carnival with these two topics to choose from:
1. Father's Day is June 19. Write anything you want pertaining to Father's Day.
2. What is your favorite summer recipe? Please share with us!

I've picked one of my favorite recipes to share:

This is a simple summer salad using tomatoes and cheeses!
Start by slicing fresh tomatoes (home grown are even better) and arrange on individual plates.
I salt and pepper the tomatoes.
Then add a combination of cheese on top. I tend to use: feta, mozzarella, and fresh slithers of Parmesan.
Season with oregano and basil. (Using fresh is also better-just use smaller amounts)
Then top it off with a drizzle of olive oil and balsamic vinegar.
Quite tasty!

Well, I wrote this post earlier this week, but it's on a father's day gift, so I hope it still counts. Here you go!
